The time of year affects the quality of the raw material because of temperature, food availability, maturity level etc.  Fish that has for example recently spawned is not a good raw material and neither is fish that has gained a lot of weight over a short period of time.  It is of course difficult (impossible in fact) to react to most natural fluctuations in the condition of the raw material, but the issue nevertheless needs to be considered when identifying different quality factors.  Vessel operators are though able to make some adjustments in order to tackle some of these influencing factors, as they for example have to be aware of the need for improved cooling when the temperature rises during the summertime.
